For the Dressing:

  • ½ cup fresh squeezed lemon juice
  • ¼ cup red wine vinegar
  • 1 cup olive oil
  • 2 – 3 cloves or minced garlic
  • 1 ½ tsp dried oregano
  • Pinch of dried time
  • Salt and fresh ground pepper to taste

For the Salad:

  • Any variety of lettuce – I like a mix of spinach and romaine or spring mix
  • Chopped cucumbers
  • Sliced red onion
  • Cherry tomatoes – halved
  • Feta Cheese – crumbled
  • Kalamata olives
  • Baby bell peppers
  • Cooked & sliced grilled chicken, tofu or shrimp
  • Pepperoncinis

Instructions:

  1. For the dressing – Combine lemon juice, vinegar, oregano, thyme, salt & pepper in a bowl, using a whisk, slowly stream in olive oil and whisk into vinegar mixture. It will thicken as you combine.  You can also use a blender.
  2. For the salad – combine salad ingredients in a large bowl. Toss with salad dressing and place protein of choice on top. 
  3. Enjoy!
