The Inspiring Journey of an Injured Kitten and Our Community’s Heartwarming Rescue Efforts.
In September, Animal Rescue Crusaders of Texas (ARC) was contacted by VEG about a badly injured kitten that was brought in by a Good Samaritan. The kitten had a pelvic fracture and was unable to put weight on her back legs. She was severely underweight, and feverish, and the prognosis was hopeful, but not optimistic. She was placed with an experienced foster and named “Grit” for her perseverance and strength. The next few weeks were a battle. At her follow-up with the vet, she was placed on strict crate rest. Within the week, after she had finished some of her meds, she started crashing again. She had to be syringe fed around the clock, her fever came back, and her follow-up exam showed a lingering infection. She was brought back to VEG for an abdominal ultrasound, where they saw fluid in the abdomen and damage to her bladder. She was put on a second antibiotic, pain meds, and a steroid. Grit never gave up! Even while clearly in pain, she was affectionate with people and other animals. After about a week of syringe feeding and new meds, she started eating wet and dry food on her own.
After 6 weeks, she was allowed to walk around in small doses to stretch her legs and relearn how to walk. Now she roams freely in her foster home. She gets along with all of the other animals and is extremely affectionate and talkative. Her favorite activities are making biscuits on the giant German shepherd and screaming at her foster mom for snackies. She is an absolute lover, and is doing so well!
But we don’t just help kitties in need. We help dogs too!
Earlier this year, some puppies were found in a basket at a park and taken to animal control. We posted them on the Nextdoor App in hopes of finding fosters. Three ladies came forward to foster two puppies each. One of our board members contacted a dog rescue partner, Cody‘s Friends, and they agreed to help find homes for them. We also supported them by having them come to our Adopt-a-Pet Adoption Events at Petco. Two of the fosters ended up adopting a puppy and the rest were adopted out through Cody’s Friends.

We all know the feeling…post run, tired, sweaty and HUNGRY! What better way to field that hunger than with a plate of fresh, hot, sweet and savory PANCAKES! So sit back and review this list of the top five reasons pancakes are the best post run meal, let it act as your warm up for the best pancake run in Texas, Run Project’s annual Hotcake Hustle!
Reason #1
There are few better ways to fill your stomach after a long run, or a short run, for that matter than with something sweet, like a stack of sweet pancakes. Your body craves sugar after a long run, it’s science! As you run your body absorbs sugar and uses it as energy, what better way to refuel your sugar supply than with some tasty pancakes and syrup. Did you know that you also sweat out sugar? According to a study by sciencedirect.com “The concentration of glucose in sweat was 0.06–0.11 mM in normal subjects and 0.01–1.00 mM in diabetic patients.” Just another reason to add some pancakes to your post run meal.
Reason #2
If you’re anything like me you are starving after a long run. Guess what? Pancakes are filling. Along with the sugar, your body just burned off a good significant amount of calories. So fill your belly up with some pancakes and much needed calories that you just burned off. According to the American Council on Exercise (ACE) “Physical Activity Calorie Counter determines that a 150-pound person running at a pace of 5 mph (8.05 kph) will burn approximately 360 calories in 5 kilometers. A 150-pound individual running at this pace will take about 37 minutes to complete a 5K race.” Pancakes sound like a pretty great way to fill this calorie deficit to me.

Watermelon Feta Salad

INGREDIENTS:
1 medium watermelon, cut into 1″ cubes
1 bunch basil leaves
1/2 medium red onion, diced large
12 oz. block of feta, cut into 1″ cubes
1 cucumber, cut into half moons
Balsamic glaze, for drizzling
INSTRUCTIONS:
In a large bowl combine, watermelon, basil, red onion, feta, cucumber.
Drizzle Balsamic glaze over top.

Chickpea Salad

INGREDIENTS:
FOR THE SALAD:
1 (15-oz.) can chickpeas, drained and rinsed
1 English cucumber, cut
1 pt. cherry tomatoes, halved
1 red bell pepper, diced
1/2 small red onion, thinly sliced
2 avocados, cubed
1 c. chopped Italian parsley
1/2 c. torn basil
2 hardboiled eggs, chopped
FOR THE DRESSING:
1/3 c. olive oil
3 tbsp. red wine vinegar
2 tbsp. fresh lemon juice
1 grated garlic clove
1/2 tsp. kosher salt
1/4 tsp. ground black pepper
1/4 tsp. red pepper flakes
DIRECTIONS:
In a large bowl, fold together the chickpeas, hardboiled eggs, cucumber, tomatoes, bell pepper, red onion, avocado, parsley, and basil.
In a medium bowl, whisk together the olive oil, vinegar, lemon juice, garlic, salt, black pepper, and pepper flakes until combined. Pour over the salad and combine. Serve immediately.
