For the Dressing:
- ½ cup fresh squeezed lemon juice
- ¼ cup red wine vinegar
- 1 cup olive oil
- 2 – 3 cloves or minced garlic
- 1 ½ tsp dried oregano
- Pinch of dried time
- Salt and fresh ground pepper to taste
For the Salad:
- Any variety of lettuce – I like a mix of spinach and romaine or spring mix
- Chopped cucumbers
- Sliced red onion
- Cherry tomatoes – halved
- Feta Cheese – crumbled
- Kalamata olives
- Baby bell peppers
- Cooked & sliced grilled chicken, tofu or shrimp
- Pepperoncinis
Instructions:
- For the dressing – Combine lemon juice, vinegar, oregano, thyme, salt & pepper in a bowl, using a whisk, slowly stream in olive oil and whisk into vinegar mixture. It will thicken as you combine. You can also use a blender.
- For the salad – combine salad ingredients in a large bowl. Toss with salad dressing and place protein of choice on top.
