SALAD INGREDIENTS:
- 3 cups strawberries sliced
- 3 tablespoon fresh mint roughly chopped
- 3 cups watermelon cubed
- 1/2 cup cucumber finely sliced
- ½ cup feta cheese
- optional – chia seeds, salt and pepper
DRESSING INGREDIENTS:
- 2 tablespoons Olive Oil
- 2 tablespoons of fresh lime juice
- 2 teaspoon honey
INSTRUCTIONS:
- In a small bowl mix all the dressing ingredients, shake well.
- In large bowl mix all salad ingredients. Gently stir in the chopped mint, and crumbled feta cheese.
- Drizzle with the salad dressing. Add chia seeds, salt and pepper to taste. Enjoy!
