Chicken Tacos with Watermelon Salsa

Watermelon Salsa:

  • 2 cups diced watermelon
  • 1/4 small diced red onion
  • 2 tbsp chopped cilantro
  • Juice of 1 lime
  • 1/2 jalapeno pepper, seeded and diced
  • 2 tablespoon olive oil

Other ingredients:

  • 3 cups of shredded rotisserie chicken
  • bakery fresh tortillas
  • cotija cheese, crumbled
  • avocado, chopped
  • cilantro, garnish

Combine salsa ingredients and refrigerate at least 20 minutes.

Assemble tacos by adding shredded chicken inside fresh tortilla top with chilled watermelon salsa, cojita, avocado and garnish with cilantro.
