SALAD INGREDIENTS:

  • 3 cups strawberries sliced
  • 3 tablespoon fresh mint roughly chopped
  • 3 cups watermelon cubed
  • 1/2 cup cucumber finely sliced
  • ½ cup feta cheese 
  • optional – chia seeds, salt and pepper

DRESSING INGREDIENTS:

  • 2 tablespoons Olive Oil
  • 2 tablespoons of fresh lime juice
  • 2 teaspoon honey

INSTRUCTIONS:

  • In a small bowl mix all the dressing ingredients, shake well.
  • In large bowl mix all salad ingredients. Gently stir in the chopped mint, and crumbled feta cheese.
  • Drizzle with the salad dressing. Add chia seeds, salt and pepper to taste. Enjoy!
