INGREDIENTS:

1 T Extra Virgin Olive Oil

1 Small White Onion – Minced

2 garlic cloves – minced

2 (10 oz) containers black eyed peas

5 cups vegetable broth or water

Salt & Pepper to taste

Optional – spicy sauce – Tabasco, Cholula, etc.

Optional – diced jalapenjos

Optional Side – Jiffy Corn Bread – (it’s $0.50 and super easy!)

DIRECTIONS:

  1.  Select “Saute” option on InstantPot, add olive oil and heat until shimmering.  Add the onions and saute, stirring occasionally, for 3-4 minutes, until translucent.  Add garlic, salt & pepper, and cook for an additional minute, stirring frequently.
  2. Add peas & 5 cups of vegetable broth or water, enough to cover. 
  3. Turn off of “saute” mode and set Instant Pot to Pressure cook on high for 9 minutes.
  4. When 9 minutes is complete, allow the pressure to naturally release, remove lid, stir, add salt & pepper to taste.

Please note, the pressure cooker will take 10 – 20 minutes to come to pressure.  This is the perfect time to prep some Jiffy Corn Bread.  The mix is $0.50 and easy to make.  I like to bake in muffin tins.
